EGG-FREE GARLIC AIOLI (For best results, use the Vitamix AER Disc Container)

1/4TH CUP AQUAFABA (JUICE DRAINED FROM GARBANZO BEANS)

1TBS APPLE CIDER VINEGAR

1/2TSP DIJON MUSTARD

1/2TSP KOSHER SALT

1TSP LEMON JUICE

1TSP GARLIC PUREÉ

1 CUP LITE OLIVE OIL (DO NOT USE EXTRA VIRGIN)

Place all ingredients into the Vitamix AER Disc container in the order listed, except for the olive oil. Start on low and allow ingredients to mix. Remove the lid plug. After 20 seconds begin to pour the olive oil in very slowly from the top. While pouring, begin to increase blending speed slowly to about speed 6. Once olive oil is poured the Aioli mayonnaise will complete and become solid. Total time, 1-1/2 minutes. Stop the Vitamix.
