HENRY’S MUSTARD VINAIGRETTE
MADE IN A VITAMIX
40Z (1/2 MEDIUM) ROUGH CHOPPED CUCUMBER
1/4 CUP + 2TBS RED WINE VINEGAR
2 GARLIC CLOVES
1TBS WHOLE GRAIN DIJON MUSTARD
2TSP BLENDITUP SOUTHWEST SPICE BLEND
1/2TSP GARLIC POWDER
1/8TSP CRUSHED RED PEPPER
1/2TSP DRIED THYME LEAVES
2TBS PURE MAPLE SYRUP
1TBS LEMON JUICE
1TSP COARSE KOSHER SALT
1/2 CUP EXTRA VIRGIN OLIVE OIL.
DIRECTIONS:
Place chopped cucumber in the 48oz/32oz Vitamix Container and pulse to chop into smaller chunks. Add the rest of the ingredients (except for the olive oil) in the order listed. Turn the Vitamix on the lowest setting and begin slowly pouring the olive oil and while slowly increasing the speed to 8. Blend until smooth.
