1/3 CUP RED WINE VINEGAR OR SHERRY VINEGAR
1LBS SWEET GREEN PEAS. FROZEN OR FRESH ENGLISH PEAS (BLANCH FOR 40 SECONDS) (RESERVE 1/4TH CUP FOR GARNISH)
4 SLICES OF A STALE FRENCH BAGUETTE CUT INTO 1 INCH SLICES SOAKED IN 1 CUP OF COLD WATER
12OZ SUGAR SNAP PEAS (BLANCH FOR 1-2 MINUTES)
1/2 OF AN ENGLISH CUCUMBER. SKIN AND SEEDS REMOVED. ROUGH CHOP
4 MINCED OR CHOPPED GARLIC CLOVES
1/4 CUP EXTRA VIRGIN OLIVE OIL
COARSE KOSHER SALT. 1/2 TBS PLUS 1/2 TSP (OR SALT TO TASTE)
FRESH GROUND BLACK PEPPER 1TSP (OR ADD TO TASTE)
2 TSP FRESH LIME JUICE
2-3 LARGE FRESH MINT LEAVES
DIRECTIONS:
PLACE ALL INGREDIENTS IN THE VITAMIX 64OZ CONTAINER (OR OTHER PROFESSIONAL BLENDER) IN THE ORDER LISTED. START ON VARIABLE SPEED 1 AND SLOWLY INCREASE TO THE HIGHEST SPEED. BLEND FOR 2 MINUTES.
POUR INTO AIR TIGHT CONTAINER AND CHILL IN THE REFRIGERATOR FOR SEVERAL HOURS OR OVERNIGHT.
SERVE IN A SOUP BOWL OR TO-GO CONTAINERS AND CUPS. GARNISH WITH PEAS, ENGLISH CUCUMBER, SCALLIONS, BLACK PEPPER AND EXTRA VIRGIN OLIVE OIL.
