1/2 Cup (120 ml) Balsamic Vinegar
1/3 Cup ( 8 Small) Dried Mission Figs
3 Tablespoons (45 ml) Orange Juice
1 Tablespoon Water
1 Teaspoon Coarsely Chopped Shallots
1/2 Teaspoon Fresh Orange Zest
1/2 Teaspoon Vanilla Extract
1/4 Teaspoon Salt
1/8 Teaspoon Freshly Cracked Black Pepper
1 Cup (240 ml) Vegetable Oil
Directions
(1) Place vinegar, figs, orange juice, water, shallots, zest, vanilla, salt and pepper into the Vitamix container in the order listed and secure lid.
(2) Select Variable speed 1
(3) Switch machine to Start and slowly increase speed to Variable 10
(4) Blend for 30 seconds or until smooth
(5) Reduce speed to Variable 4 and remove lid plug
(6) Pour oil in a thin stream through the lid plug opening until throughly emulsified (1 minute). If necessary, scrape sides of the container with spatula
(7) Refrigerate leftovers
