6 Large Eggs
2 Tablespoons (30 ml) Red Wine Vinegar
1-1/2 Small Garlic Cloves, Peeled
1/2 Cup + 1 Tablespoon (135 ml) Lemon Juice
1 Cup (100 g) Grated Parmesan Cheese
1/2 Teaspoon Salt
1 Tablespoon + 1-1/2 Teaspoons Anchovy Filets
1/3 Teaspoon Dry Mustard
1 Cup + 2 Tablespoons (270 ml) Extra Virgin Olive Oil
Directions
(1) Place eggs, vinegar, garlic, lemon juice, cheese, salt, anchovies and mustard into the Vitamix container in the order listed and secure lid
(2) Select Variable speed 1
(3) Switch machine to Start and slowly increase speed to Variable 5
(4) Blend for 25 seconds or until smooth. reduce speed to Variable 1 and remove lid plug
(5) Slowly pour olive oil through the lid plug opening and blend an additional 10 seconds
