Sweet Potato Acorn Squash Soup

YIELD: ABOUT 6 CUPS

 

1 medium baked sweet potato, (or yam) skin removed

1 medium baked acorn squash, skin and seeds removed

3 stalks of celery (roughly chopped)

1/2 yellow onion (roughly chopped) 

1 whole granny smith apple (roughly chopped) 

2-1/2 cups of vegetable broth (bring to a boil on stove) 

2tsp organic maple syrup

1/2tsp pumpkin pie spice or nutmeg

1/2tsp cinnamon

2Tbs cooking oil for sautéing  

1tsp kosher salt, 1/8tsp black pepper for sautéing 

Directions: 

(1) Sauté Apples, Onions and Celery until sweated and tender

(2) Add Apples, Onions and Celery to the Vitamix container

(3) Add Sweet Potato and Acorn Squash to the Vitamix container

(4) Pour vegetable broth into the Vitamix container

(5) Add maple syrup and cinnamon

(6) Secure the Vitamix container lid

(7) Select Variable speed 1, press Start then slowly increase to Variable 10 (then to HIGH for VM 5200 series)

(8) Blend for 40 seconds or until smooth

(9) Serve immediately (or refrigerate for up 5 days), Garnish with chopped Green Onions. Sprinkle with Cinnamon
