CLASSIC AND PESTO HUMMUS

FOR BEST RESULTS CREATE WITH A VITAMIX MACHINE

 

2-1/2 CUPS CHICKPEAS/GARBANZO BEANS. (UNPROCESSED OR CANNED) SAVE LIQUID

(If using unprocessed chickpeas place 1 cup of chickpeas and 2 cups of water in a saucepan and cook over medium heat for 30 minutes)

1/4 CUP TAHINI OR 1/4 CUP OF SESAME SEEDS

3 TBS EXTRA VIRGIN OLIVE OIL

1 LARGE GARLIC CLOVE

1/4 CUP FRESH LEMON JUICE

1/2 CUP LEFTOVER CHICKPEAS JUICE

1/2 CUP OF WATER

2 TSP GROUND CUMIN

2 TSP COARSE KOSHER SALT

Directions

Place all ingredients into the Vitamix container in the order listed and secure lid. Gradually increase speed to the highest and blend for 1 minute or until desired smoothness. Serve immediately or refrigerate.

FOR PESTO HUMMUS: STIR IN 2-3 DOLLOPS OF PESTO TO CLASSIC HUMMUS RECIPE.
