WARM PEAR SOUP
MADE IN A VITAMIX
MAKES ABOUT 5 CUPS
5 FRESH PEARS (PEELED AND DRENCHED IN LEMON JUICE TO MAINTAIN COLOR)
2 TSP CARDAMOM, 2 CINNAMON STICKS. EACH MILLED TO A FINE POWDER
CREATE POACHING LIQUID:
IN A DUTCH OVEN OR STOCKPOT ADD 8 CUPS OF WATER, 1/2 CUP OF APPLE JUICE, 1/2 CUP OF PURE MAPLE SYRUP AND MILLED SPICES LISTED ABOVE.
PLACE ALL PEARS INTO POACHING LIQUID AND SIMMER ON LOW TO MEDIUM HEAT FOR 45 MINUTES, UNTIL TENDER. (TIP: USE A TOOTHPICK TO VERIFY TENDERNESS)
IN THE VITAMIX:
ROUGH CHOP 4 OF THE 5 POACHED PEARS. PLACE THE 4 ROUGH CHOPPED PEARS IN THE VITAMIX CONTAINER AND ADD THE FOLLOWING: 1/2 CUP OF THE POACHING LIQUID. 2TBSP PURE MAPLE SYRUP. 1/4 TSP KOSHER SALT. 1/2 TSP CHILI LIME SEASONING SALT. (TAJIN) 1 WHOLE CAN OF COCONUT CREAM (OR 16OZ OF FLAVORLESS YOGURT). GRADUALLY INCREASE THE SPEED OF THE VITAMIX UNTIL AT THE HIGHEST AND BLEND FOR 2 MINUTES. ROUGH CHOP REMAINING PEAR AND ADD TO MIXTURE. PULSE TO CREATE A CHUNKY TEXTURE.
POUR PEAR SOUP MIXTURE INTO A SOUP POT ON THE STOVE AND SIMMER ON LOW TO MEDIUM HEAT FOR 20 MINUTES. SERVE IMMEDIATELY.
